1 tbsp flaxseed and 1/2 tsp chia seeds


Instructions:

Roasted Veggie Buddha Bowl


1 cup rice or smashed chickpeas, cooked
1 sweet potato, diced
1 cup broccoli florets
1 red bell pepper, sliced
2 tbsp olive oil
1 tsp smoked paprika
1 avocado, sliced
Tahini dressing (optional)


Instructions:

1. Preheat oven to 400°F (200°C). Toss sweet potato, broccoli, and bell pepper in olive oil and paprika. Spread on a baking sheet.
2. Roast for 20-25 minutes, turning halfway through.
3. Assemble the bowl with rice (or chickpeas), roasted veggies, avocado, and tahini dressing.
